Hi Brendan,
I have been flying for not quite a year and started to do an 'extreme flying' paragliding course in May ('started' because we couldn't finish as it rained half the time ...). It was a very valuable experience and I can only recommend it; you will be a much more competent pilot afterwards. In this course, we started with pretty simple exercises - Big Ears, B-Stall and small Wingovers - and even these simple things gave me a new feeling for the glider. The training then continued with simulated wing collapses (gradually getting bigger) and deep spirals. The next things to try will be Frontal collapses and wing collapses during accelerated flying. You can also try a fullstall and throw the reserve if you want.
All the maneuvers are flown over water with the teacher in a boat below. He tells you what to do via radio and gets you out of the water if something goes wrong, but this rarely happens.
I did this course in Austria, with 'Montana Flugsport', which is the most widely known school for these courses here in Germany. Their website -
http://www.montana-flugsport.com - is in German, but the teachers speak English

I've been there two times - next week will be the third try - and also met students from England and the US there.
Hope I've got most of the English terms right and answered your questions. If anything is unclear, tell me. Bye,
